Tannin
is the substance in wine that causes a firm, mouth drying feeling to
occur in your mouth.
Tannin is extracted from the skins, seeds and stems of the grapes. Red
wines will contain more tannin than will white wines. When oak barrels
are used for fermentation or aging, white wines will develop a degree of
tannin. For a good idea of what tannin will feel like in your mouth, eat
just the skins of the grapes or drink strongly brewed teas.
What are sulfites
In the United States, almost all wine bottles will have the words
“contains sulfites’ on the labels, as is required by law. This labeling
is required because very small percentages of asthma sufferers can be
extremely sensitive to sulfites. Sulfites, or sulfur dioxide, is a
compound that occurs naturally during the fermentation process. However,
because of its antibacterial and preservative properties, a wine maker
will sometimes add more sulfite than what occurs naturally. Because they
require more protection, white wines have more sulfites than do red
wines.
